Description: An interesting rich desert that can be eaten with a vegetable meal.
Ingredients for 2 Portions:
1 and half cups of Butternut pumpkin pieces (Butternut is a sweet pumpkin and works best in this dish) 1 cup cashews or soaked almond pieces, ground 2 - 4 Tbsp fresh orange juice or Rejuvelac 2 Tbsp raw honey Half cup fresh coconut flesh 1 tsp mixed spice
Preparation:
1. Blend Pumpkin, ground nuts, honey & orange juice then blend coconut and spices. 2. If filling is too thin add more ground nuts, if too thick add more pumpkin and juice. 3. You may prefer blending until the pumpkin is a smooth paste or you may prefer blending just enough to allow some crunch to the texture. 4. The mixture should have a very thick pancake batter texture prior to chilling. 5. Spoon in to individual parfait glasses or desert dishes. 6. Chill until firm. 7. Sprinkle with cinnamon to serve. You may also add a nut or seed cream such as the Almond Seed Sauce but you may find this too rich.
