4 dried figs 2 fresh dates 1 cup mixed nuts and seeds (almonds, cashews, walnuts, sunflower seeds etc.) Juice of 1 orange 2 tablespoon carob powder 1 teaspoon vanilla Desiccated coconut to cover
Preparation:
Grind figs, dates, nuts, seeds and carob powder in a food processor until the mixture holds its shape but is not too dry. When it is pliable, shape into balls and roll in coconut. This is easy to do if you put the coconut in a plastic bag, toss the balls in and shake them about. When ready, place in the fridge if they are going to be eaten in the next few days.
You can spice this up with orange juice and zest, vanilla or spices. A well-liked addition includes tahini. Experiment until you find the combination you like.
