2 small firm pears, sliced thinly 1 Tbspn lemon juice 2 Tbspn extra virgin olive oil 3 tspn red vinegar Salt and freshly ground black pepper 1 cup flaked parmesan cheese (animal rennet free)
Preparation:
Wash and dry rocket. Toss the pear and lemon juice together in a small bowl. Combine rocket in a large bowl with oil, vinegar, salt and pepper. Add drained pears and parmesan to rocket and toss gently. Not suitable to freeze!
